SEAFOOD DAY Breakfast: Smoked Salmon
with Bagels: Smoked salmon, red onions, cream cheese, capers, mayonnaise and fresh
bagels or poached eggs served with toast, hash browns, and assorted fruit. Lunch:
Halibut and Chips. Fresh Alaskan halibut, large Idaho potatoes, and large onions
cut in rings, dipped in beer batter and French-fried to a golden brown. Served
with malt vinegar, tarter sauce, and ketchup. Enjoy a locally-brewed Alaskan Amber! Appetizers:
Fresh Alaskan Dungeness Crab served hot with melted butter and cold with cocktail
sauce and wasabi. Crack the shells and enjoy the meat. Dinner:
Fresh Alaskan barbecued salmon cooked with a special sauce and served with rice
pilaf and fresh vegetables, and a mixed green salad served with your dressing
of choice. Desert: Berry tart with whipped cream. SOUTH
EAST ALASKA FAVORITES Breakfast: 3-egg
omelets sautéed with local prawns, cheese, onions, mushrooms and tomatoes.
Served with orange juice, assorted fruits, salsa, hash brown potatoes and your
favorite bread. Lunch: Home-made salmon burgers with coleslaw,
cheese, onion, tomato, pickle and mayonnaise. Appetizers: Fresh
"peel and eat" Alaskan prawns served with cocktail sauce and wasabi. Dinner:
Start with a bowl of clam chowder. Alaskan king crab served in the shell hot with
melted butter and hot bread, fresh vegetables. Desert: Peach
cobbler. ALASKAN DAY
Breakfast: Three egg omelets sautéed with local Dungeness
crab, cheese, onions, tomatoes, and mushrooms. Served with potatoes, toast, assorted
juices and fruits. Lunch: Corn chowder and crab salad sandwich. Appetizer:
Fresh Dungeness crab cakes sautéed with onion and herbs, served with wasabi
mayo sauce. Dinner: Fresh Alaskan Halibut, served barbecued
or pan-fried served with potatoes, vegetables, and mixed green salad. Desert:
Baked Alaska. MEXICO DAY
Breakfast: Enjoy Tomato juice or Bloody Marys with your South
of the Border breakfast. Fresh mangos, papayas, and chorizo and eggs served with
flour tortillas. Chorizo is a Mexican pork sausage, sautéed with onions
and eggs. Mexican potatoes, potatoes chopped and sautéed in butter with
onions and spices. All served with a variety of hot sauces. Lunch:
Beef Tacos and refried beans. Corn tortillas stuffed with shredded beef and fried
lightly crispy. Add your favorite fillings from fresh avocados, grated cheddar
& mozzarella cheese, Green onions, Tomatoes, Cilantro, and lettuce. Served
with fresh salsas and Serrano chilies. Add a Mexican beer if you like! Appetizers:
Margaritas, blended or on the rocks, with Nachos Supreme tortilla corn chips covered
in melted cheese, green onions, black olives, and chili and Jalapeños. Dinner:
Fajitas with Mesquite Chicken strips. Large flour tortillas served hot, stuffed
with chicken strips and add your favorite fillings. Fillings: fresh avocados,
green onions, cheese, tomatoes, and a variety of fresh salsas. Served with Vino
Tinto or Vino Blanca. Desert: Mexican Flan custard with a coffee
flavored sauce. WESTERN DAY
Breakfast: Ranch Breakfast served with orange juice and local
fruit. Three eggs as you like them, three sausages, three bacon, hash brown potatoes,
and biscuits and gravy. Lunch: Burgers and fry's. Lean ground
beef cooked on the barbecue to your liking, served with cheese, lettuce, tomatoes,
onions, mayonnaise, mustard, or ketchup. Served with French fries and chili with
cheese and onions, by the bowl or put it on you burgers. Appetizers:
Brie cheese and roasted garlic served with crackers and wine. Dinner:
To start, special garlic Caesar salad with fresh bread. Large Ribeye steak or
petite Filet, barbecued to order, with corn on the cob and a large Idaho potato
baked with butter, sour cream, chives, melted cheese, and onions. Desert:
Home-made chocolate cake. EUROPEAN DAY
Breakfast: Blueberry Delight served with Cranberry juice and assorted
fruits. Blueberry's, bread, cream cheese, eggs, all baked together and served
with maple syrup. Lunch: Grandma's chicken soup with dumplings
and vegetables. Hot bread with butter. Also, special cooked bread served with
jams and raw garlic. Appetizers: Goat cheese and roasted garlic
on toasted pitas. Dinner: Spatzel and snitzel, breaded veal
served with vegetables. Desert: Apple Strudel served hot with
vanilla ice cream. ITALIAN DAY
Breakfast: Blueberry Pancakes served with butter, maple syrup,
assorted juices and fruits. Lunch: Anti Pasta salad and thin
crust pizza served with bread sticks. Appetizers: Focaccia
bread with olive oil. Dinner: Italian salad, pasta with slow
cooked Italian sausage red sauce and fresh Parmesan, and Italian bread. Desert:
Spumoni ice cream.  |
